  • 3 1/2 Cups beef broth
  • 1/2 Cups Red wine
  • 1/4 Cups unsalted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  1. Strain the pan juices from the roasting pan and skim off any fat.
  2. Place the roasting pan on top of your stove top burners over high heat.
  3. Add the pan juices, beef broth, and red wine.
  4. Scrape up any of the brown bits left on the pan.
  5. Cook until there is about 1 1/4 cup of liquid left.
  6. Whisk in 4 tablespoons of butter and salt and pepper to taste.
