Mix warm water and yeast together, if the yeat foams, it's still good. In a large bowl, mix the flour and salt. Add yeast water mixture and stir until mostly formed. Dump out onto counter and knead for 8 minutes, no more no less! Cover and wait 1 hour min, cut into dough balls and let those rest on work area covered with damp towel. Use 00 flour in a very hot oven, 500-550 degrees. Normal flour/bread flour will burn up.
